KRK: WhatTA-YA Think of this prawns N’ Pasta

INGREDIENTS:

Pasta 

■ Traditional fettuccine pasta (8 oz.) 

Black fettuccine pasta (8 oz.) 

Pinch of salt (in water) 

Sauce 

■ Garlic cloves (3) 

■ White cooking wine (1/2 cup) 

■ Butter (3 tbsp.) 

■Fresh parsley (4 leaves) 

■ Fresh lemon (1/2) 

■ Olive oil (1 tbsp.) 

■ Salt (2 tsp.) 

Clam juice (3 oz.) 

The Protien 

■ Fresh prawns or fresh XL shrimp 

Salad 

■ Dark greens mix (1/2 cup) 

■ Mozzarella cheese (1/4 cup) 

■ Spicy mustard (1 tbsp.) 

Black olives (1/4 cup) 

■ Fresh lemon (1/2) 

Garnish 

■ Wakame seaweed (1-2 tbsp.) 

■ crushed peppercorn (a pinch)

INSTRUCTIONS:

Lydia's Dark Salad base (prep. time 5 mins.) 

In a salad bowl combine the greens and chopped olives. Add the spicy mustard, Mozzarella and mix. Set in the fridge until final presentation. 

Pasta and Prawns (cook time 16-18 mins.)

In a pot, boil water and lightly add salt. Next, drop in the pastas (Black and white) and allow them to cook. While the pasta cooks, let's prep those shrimp. Grab a shrimp-prep tool or carefully use a knife to remove the shrimp shell and de-vein the shrimp. Make sure they are clean for their trip to the afterlife. Put them in the fridge for the moment. Check on the pasta. Usually it's not ready yet because the fettuccine noodle is a dense pasta and requires time to fully soften. Once the pasta is cooked, remove the pot from the heat bur do not strain pasta yet.

Let's Get the Heat Going, It's Showtime(Time to cook)

Prawns (cooking time 5 mins.)

Heat a pot of water to boil. Once boiling, carefully drop the prawns in the boiling water. (Prawns and shrimp cook extremely fast. Avoid overcooked shrimp by cooking no more then 5-6 minutes max. The prawns should have a curved shape once fully cooked. If they curl into an O shape then they've been overcooked and have now been assigned to Juno in the afterlife). Once cooked, they should look light red/ orange in color tone. For now, set aside a few moments and begin the sauce.

The Sauce (Sauté Aromatics) (cooking time 6-7 mins.)

Take your Garlic and dice it. Do the same to the parsley. Heat a pan to medium heat. Add the olive oil and butter. Stir them until the butter has melted. Add the garlic and salt (pepper is optional) and stir them together. Cook until fragrant, usually about a minute or two. You should smell that buttery goodness! This is followed by adding in the white cooking wine and lemon. Bring the mixture to a simmer. Let the liquid reduce by about half to concentrate the flavors. Next, reduce the heat to low and drop in the cooked shrimp and sprinkle the parsley over the shrimp, Stirring them into a silky union of buttery garlic and herby shellfish. Take the pasta and add it to the sauce. Ensure the noodles get coated in the tasty scampi style sauce. If you desire a thicker coat add 1 more tbsp. of butter while the pasta is still hot. So make those snap decisions, the sandworm waits for no one! 

Presentation (freshly crossed-over

In a dish, use a large serving fork to twirl fettuccine together and place the pasta in the center (I know, it's fancy). Arrange the dark greens salad around the pasta. This is the border between life and death, or in this case flavor upon flavor! Arrange your prawns around your pasta into a swirl-star pattern. (The video displayed them on a goblet and a dish for a unique look. You don't need to get that creative unless you would like to impress Delia Deetz!) You may also arrange them in the center. Lightly pepper (fresh peppercorn). Pour some garlic sauce over the dish. Allow the sauce to rain over the entire dish. Don't go too heavy, you saw what happened to the guy with the chicken bone stuck in his throat! Moderation! Add the Wakame seaweed over the top for a garnish. Take pictures and share! Conjure up your favorite ritual and enjoy your creation inspired from the afterlife!
