SK: The Queen’s Eggs
INGREDIENTS:
6-8 eggs
1/4 cup of mayonnaise
2 tsp mustard powder
2 tsp dried chives
2 oz. relish juice
1 tsp dill
2 tsp horse radish
1 tsp salt
1 tsp ground black pepper
black food coloring
green food coloring
black corn tortilla chips (optional)
PREP TIME: 20 minutes + 2-3 hours to dye egg whites black (or as close to it)
COOK TIME: 8 minutes
DIRECTIONS:
1 - Take your eggs and bring them to a boil.
2 - In a bowl add mayo, mustard powder, dried chives, relish juice, dill, horse radish, salt and pepper.
3 - Once eggs are boiled, place them in an ice water bowl for a few minutes.
4 - Once eggs are cool, peel the shell from the eggs.
5 - Grab a cutting board and cut the egg in half along the long side. Avoid cutting it on the short side.
6 - Take your egg halves and scoop out the yoke into the bowl with the condiments.
7 - Once all yokes are scooped, use a fork to mash and a whisk to mix the yokes and the rest of the condiments until color has reached green. Then place the mixture in the fridge.
8 - In a separate bowl, take about 2 cups of water and add approx. 6-8 drops of black food coloring liquid or gel. Mix the food coloring with the water until black.
9 - Submerge your egg whites in the black dyed water and allow them to take color anywhere from 2 to 3 hours. It’s ok if they are slightly purple.
10 - Remove egg whites from black water and place on a serving dish.
11 - Take a piping bag and your favorite tip. Cut the edge of the piping bag and insert the tip. Ensure the tip does not fall through the hole.
12 - Take your green egg mix and scoop it into the bag.
13 - Take a paper towel and dry the excess water off the black egg whites. Ensure the egg white is completely dry.
14 - Optional for aesthetics - Crush your black corn tortilla chips into flakes. Cover the dish with a light layer of flakes.
15 - Once tortilla chips are arranged, arrange your black egg whites.
16 - Take your piping bag and gently squeeze and move bag in a circular motion until egg white is filled.
17 - Top with dill and dried chives.
18 - Serve and enjoy.
